Instant Pot Chicken & Sausage Jambalaya

Easy, fast and incredibly delicious! One of my family's favorites.


INGREDIENTS:

½ Yellow onion, chopped

½ Green bell pepper

½ red bell pepper, chopped (optional)

3 stalks celery (~1/2c)

1 lb chicken thighs, cubed

1 lb Smoked Cajun Sausage, sliced in coins (Richard’s or Savoie’s works)

1 ½ tsp All Purpose Cajun Seasoning (Louisiana)

1/2 tsp Garlic powder

½ tsp Dried thyme

¼ tsp Cayenne pepper

2 Bay leaves

1 14oz can diced tomatoes

1 ½ c White rice

1 ½ c Chicken Broth


INSTRUCTIONS:

1. Turn IP to saute setting for 10 minutes. Add olive oil, then chopped vegetables and cubed chicken. Stir periodically.

2. While sauting, mix spices and sprinkle over above. Continue cooking and stirring.

3. When saute mode is complete, add tomatoes, rice and broth.

4. Switch to pressure cook on high. Cook for 8 minutes.

5. Pressure release. Enjoy!
